Kick Off Your Weekend with Nutritionist-Approved Truffles!

Truffles are a mouth-watering treat typically saved for special occasions, right? Think again!

 

These truffles are still mouth-watering, but they are good for your health too and loaded with protein, healthy fats and anti-inflammatory ingredients, including chia seeds and nut butter.

 

These doctor-approved truffles are the work of Attune Health’s board-certified holistic nutritionist Lee Bell, who specializes in reducing inflammation and autoimmune symptoms through nutrition and an individualized, precision diet.

Protein Truffles

 

  • 1/2 cup unsweetened nut or seed butter (almond, cashew, sunflower)
  • 1 tablespoon sprouted chia seed
  • 2 tablespoons pure maple syrup, honey, or Dolcedi (low glycemic sweetener)
  • 2/3 cup lightly packed, grass-fed, non-denatured vanilla whey powder
  • Pinch of salt

 

Suggested coatings:

  • Cacao nibs
  • Unsweetened cacao powder
  • Unsweetened, finely shredded, coconut
  • Matcha powder

 

How to assemble:

  1.  Mix the nut butter and salt in a bowl until blended.  Add protein powder and mix until completely combined.  Mixture should be firm, like dough.
  2. If mixture seems too wet, add a bit more whey, if it seems too dry, add a non-dairy milk such as almond, cashew, or coconut milk until the “dough” comes together.  
  3. Put 1 1/2 tablespoons of the mixture into your hands and shape into a ball.
  4. Roll in a coating of your choice.
  5. Place in an airtight glass container and refrigerate.  
  6. Enjoy!
