Orange is the New Salad: Moroccan Carrot Salad

It’s time to Rock the Casbah — with salad!

Take the carrots out of your veggie platters and mix them with herbs, spices and honey to create a flavorful and healthy Moroccan Carrot Salad. Holistic nutritionist Lee Bell recommends adding a bit of spice to your salad bowl by tossing in a bit of finely chopped Serrano chili pepper.

This root veggie is an excellent source of dietary fiber, potassium and Vitamins A, C and K. And the dressing, a mix of apple cider vinegar, lemon juice and honey, contains anti-inflammatory properties.

Plus, it’s delicious and a colorful addition to your lunch or dinner!


Moroccan Carrot Salad

  • 4 carrots, shredded
  • 1/2 cup red onions, chopped
  • 1/4 cup parsley
  • 1/2 Serrano chili, seeded, finely chopped (optional)


  • 4 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon raw honey
  • 1/2 teaspoon cumin
  • Salt and pepper to taste


  1. In a large bowl, whisk oil, lemon juice, apple cider, and honey.
  2. Add the cumin, jalapeno, and parsley.  Mix.
  3. Toss remaining ingredients into the bowl, season with salt and pepper.
  4. Top with your favorite protein, if desired.
