Smoked Salmon Appetizer

Smoked Salmon Appetizer

Makes about 12  

  • 2 Granny Smith apples
  • Juice of one lemon
  • ½ cup arugula
  • 3-6 ounces smoked salmon, look for no sugar added
  • Freshly ground black pepper


  1. Slice the apples into rounds, about 1/8 inch thick.
  2. Squeeze a small amount of lemon juice onto each of the apples — this helps stop them from turning brown and also adds some great flavor.
  3. Place a small amount of salmon onto each apple slice, with 2-3 pieces of arugula.
  4. Squeeze a small amount of additional lemon juice over each bite and then grind black pepper over the entire bite. Enjoy!
