Natalie Fortune, Attune Health’s nutritionist and research associate, loves this five- step roasted carrot side dish for several reasons.
“One, it is delicious. Two, it is super easy to make,” she said. “Three, it only has a few ingredients, but it feels really special.”
Roasted Carrots with Orange and Pistachio
- 4 large carrots, peeled
- 1 teaspoon of high heat cooking oil
- Zest and juice of one orange
- ½ cup of shelled and chopped pistachios
- 1 teaspoon of sea salt
Assembly
- Preheat your oven to 450 degrees
- Slice the carrots on an angle into ½ inch slices. Place the carrots on a baking sheet and toss with oil and sea salt. Roast in the oven for about 25 minutes, until the carrots are beginning to brown and get soft.
- While the carrots are cooking, zest the orange and chop the pistachios.
- Remove carrots from the oven and sprinkle the pistachios and orange zest. Squeeze about ½ of the juice of the orange. Toss and place back in the oven for an additional 5 minutes.
- Transfer to a serving dish and add this to your holiday spread!
