Veggie-licious! Spring Peas with Sautéed Leeks

Let’s be honest — peas have always taken a backseat to green beans, edamame and even broccoli. They are often an afterthought and it’s just not fair.  Because peas can be delicious!

Green peas are low-calorie and an excellent source of vitamin K, fiber, vitamin B1, vitamin C and folate.

Fresh Spring Peas with Sautéed Leeks

  1. 2 tablespoons extra-virgin olive oil
  2. 2 tablespoons grass-fed, cultured butter
  3. 2 medium leeks. Thinly slice the tender white part of the leek.
  4. 10 ounces fresh English peas
  5. 2 tablespoons fresh mint, thinly sliced
  6. Salt and pepper to taste


  • In a small saucepan, sauté sliced leeks in oil and butter over low-medium heat until soft.
  • Drop peas in boiling water and cook for 90 seconds. Drain, and add to leeks.
  • Stir and add fresh mint.
  • Season with salt and pepper.
  • Serve!
