Warm Cauliflower Salad with Tahini Vinaigrette

Studies have shown that cauliflower contains properties that are beneficial towards weight loss. Due to its high fiber content, cauliflower slows digestion and promotes feelings of fullness, leading to fewer calories consumed throughout the day. Cauliflower is also a great low calorie source of nutrients including: Vitamins C and K. Finally, cauliflower is a great alternative to legumes, which tend to cause inflammation in some patients with autoimmune conditions.

This salad pairs well with either chicken or fish – feel free to mix it up and see which one you like best!

INGREDIENTS:

  • 1 Medium Head of Cauliflower
  • 1 Teaspoon of Avocado Oil
  • 1 Teaspoon of Paprika (Optional)
  • 1 Teaspoon of Oregano
  • 1 Teaspoon of Sea Salt
  • Juice of 1 Lemon
  • 1 Tablespoon Tahini
  • 1 Tablespoon Extra Virgin Olive Oil
  • ¼ Red Onion, Diced
  • ½ Cup of Fresh Parsley, Chopped
  • Handful of Arugula

RECIPE:

  1. Preheat the oven to 425 degrees. Place the cauliflower florets onto a baking sheet, drizzle avocado oil, and sprinkle with paprika, oregano, and sea salt. Place in the oven and roast for about 20 minutes until golden brown.
  2. While the cauliflower is cooking, in a large bowl add lemon juice, tahini, and extra virgin olive oil. Whisk until combined.
  3. Add the red onion, parsley, walnuts and dates to the vinaigrette. Toss to combine.
  4. When the cauliflower is done cooking, add it to the bowl and mix all ingredients.
  5. Serve on a bed of arugula.
  6. If you would like, pair it with your favorite protein.
